Robert Sinskey Vineyards makes well-regarded chardonnay, cabernet, and merlot, but is best known for its intense, brambly pinot noir. The influence of Robert\\\'s wife, Maria Helm Sinskey -- a chef and cookbook author -- is evident at the back of the dramatic, high-ceiling tasting room, where there\\\'s an open kitchen for occasional cooking classes and demos. (Call ahead for a schedule.) Tours of the cave and cellar wind up with a flight of wines, but for the best sense of how Sinskey wines pair with food, reserve a spot on the culinary tour, which includes a wine and cheese pairing.
